Hi everyone. I recently received a request for a healthy
waffle recipe. I adapted this one from
The New Basics cookbook by Julee Rosso and Sheila Lukins

Buttermilk Waffles 1 ½ cups unbleached
all-purpose flour ½ cup whole wheat flour 1/8 cup ground flaxseed or ground chia seed 2 tablespoons light brown
sugar 1 tsp. baking soda ½ tsp. ground cinnamon ¼ tsp. salt 2 cups buttermilk or vanilla
soymilk 2 eggs 1/3 cup vegetable oil 1.
Preheat
a waffle iron and grease it lightly with cooking spray 2.
In a
large mixing bowl, toss together the flours, flaxseed or chia seed, brown sugar, baking soda,
cinnamon and salt 3.
In
another bowl stir together the buttermilk, eggs and oil 4.
Stir the
buttermilk mixture quickly into the dry ingredients, until almost blended 5.
Cook the
batter in the prepared waffle iron using a generous 1/3 cup for each waffle,
until crisp and golden, about 2 minutes.
Serve immediately.
