Super Healthy Banana Muffins












I have adapted a recipe to make it healthier from www.tasteofhome.com for banana muffins (recipe- Basic Banana Muffins Recipe).  

Ingredients
1 cup white flour
1/2 cup whole wheat flour
1/8 cup ground chia seeds
1/2 cup sugar
1 tsp. baking soda
1/2 teaspoon salt
3 medium ripe bananas
1 egg
1/3 cup vegetable oil
1 tsp. vanilla extract

Directions:  Preheat oven to 375 degrees.  In a large bowl, combine dry ingredients.  In another bowl, mash the bananas.  Add egg, oil and vanilla; mix well.  Stir into the dry ingredients just until moistened. You can add chopped walnuts or raisins if you like.   Fill greased or paper-lined muffin cups half full. 

Bake at 375 degrees for 18-22 minutes or until a toothpick inserted near the center comes out clean.  Cool for 10 minutes; remove from pan to a wire rack to cool completely.  Yield:  1 dozen.  

These muffins will be packed with fiber (due to the chia seeds and the whole wheat flour) and Omega 3's (chia seeds).   Enjoy!
