Here is an easy, healthy pancakes recipe I adapted from AllRecipes.com. Directions 1. In a large bowl, mix together the flour, flax or chia seeds, baking powder, salt and sugar. Make a well in the center an pour in the milk, vanilla extract, egg and oil; mix until smooth. Add fresh or frozen fruit (strawberries, blueberries, sliced bananas, etc). 2. Heat a lightly oiled griddle or frying pan over medium high heat. I recommend using cooking spray. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Serves 4. What can kids do? They can measure the ingredients, pour, crack the egg into a separate bowl and add it to the mixture. Kids also love to mix! Enjoy!!!! |
